What does one do when you have too many chickens? Make bone broth! That has been our annual routine when we cull our birds but this year we decided to give canning the meat a go instead. We opted to leave the the skin on and keep the chicken bone in for pressure canning, after par-cooking we stuff the sections into quart sized jars and fill them up with rich chicken stock. We also canned moose with homemade enchilada sauce and raw packed cubed meat, all said and done, we ended up with 90 jars of delicious food.
